Cauliflower Fettuccine Alfredo (as seen on Dr. Oz)

When I was in high school, back when I didn’t care about silly things like nutrition and would sometimes have nothing for lunch except a can of Pepsi and a pack of Rolos (shudder), one of my favorite meals was fettuccine alfredo. I loved anything made with cream and cheese and thought nothing of downing a big bowl of dairy and pasta. In later years, classic mac n’ cheese replaced fettuccine as my pasta of choice, and remained one of my regular go-to meals until just a couple of years ago (though I graduated from Kraft to Annie’s organic pasta).

So long, work-from-home Fridays

Last week I made a decision that I can only describe as “adult”: I gave up my work-from-home Fridays. Though I loved having one day a week where I could sit in front of my home computer sipping coffee all day, it’s been pretty clear for a while now that I am not very productive on those days. I seem to do best when I have a mixture of office work and freelance work: it’s much easier for me to work at the office for five hours a day and then come home and do a few hours of freelancing than it is to sit at home all day and try to be productive for a solid eight hours.

Finding balance … and planning a wedding!

Last week I had lunch with a friend and we were talking about how life never seems to slow down. She just got married in Mexico after a near two-year engagement, is looking at new homes, and is managing constantly shifting responsibilities in her career as a regional manager for a cosmetics company. I am planning a wedding in a mere two months and as a result have practically ceased all blogging and freelancing activities. There simply isn’t enough time to accomplish everything; I feel like even if I had six extra hours in every day, I still wouldn’t be able to get it all done.

For a while, I was pushing myself to accomplish as much freelance writing as possible in addition to my part-time job. I was determined to meet my daily income goals, and it was working.

Changes are coming …

Now that my blog is approaching its one-year anniversary, I’ve decided it’s time for a new look. My blog hasn’t changed much since the very basic layout I created almost a year ago, and I think it could benefit from an upgrade. Besides, it seems appropriate to celebrate all the monumental life changes of the past year by adding some new life to the blog that started it all.

Being organized doesn’t have to be boring

Last week over drinks, my friend Michelle pulled out her cute new planner from Paper Source, and I was instantly envious. So cute and colorful! So slim and sleek! Suddenly, I had to have a new planner. My battered purple polka-dot Franklin Covey three-ring binder was just not working for me anymore. It was too bulky to fit in my purse, uninspiring, and just plain tired.
